Found the perfect recipe for Japanese Strawberry Shortcake after years of trying recipes from different bakers and creators and I finally found THE one! It is from Emma Fontenella's Japanese Strawberry Shortcake.
I adapted the recipe (1.5x) to make a 3-layer, 7" cake for a family birthday celebration and feed 10 people with a couple slices more leftover to feed another 2. I love how delicate the crumb of this cake turned out to be. So super fluffy and light. Just like the original Japanese Strawberry Shortcakes that we tasted in Japan. It's truly the best recipe!
