Ingredients: Makes 12

Unsalted butter 100 g, melted & cooled slightly

Eggs 80 g

Milk 10 g

Honey 10 g

Sugar 65 g

Cake flour 80 g

Salt 1/4 tsp

Black sesame seeds 20 g

Baking powder 1/2 tsp

White chocolate 140 g


1. Toast and grind black sesame seeds into a powder.

2. Lightly oil a 12 mould madeleine pan. Preheat oven to 190°C.

3. Melt butter and allow to cool slightly.

4. In a medium bowl, mix flour, sesame powder, salt and baking powder.

5. Whisk in milk, honey and sugar till just combined.

6. Add melted butter and stir till smooth and shiny.

7. Spoon batter into a madeleine pan and bake for 10 mins.

8. Gently remove from pan to cool completely on a wire rack.

9. Melt white chocolate and pipe a thin layer onto the cleaned madeleine pan. Gently press madeleine on top.

10. Chill in freezer for 15-20 mins.

11. Remove and serve.
