Lately I've been obsessed with baking using olive oil instead of butter as I'm trying to bake and eat healthier. However, not only is it healthier but olive oil is such a great oil to use in cake baking as the cake bakes up so moist and light without the cake being oily, heavy and too rich. Also the cake is so tasty and flavorful you won't even believe that there isn't any butter in the cake!
This cake is so simple to make and so so so good! There is something about the combination of chocolate and orange that I just love so much; as much as I love the combination of chocolate and mint! But that will be another story and recipe.
Ingredients:
Light olive oil 3/4 cup
Cocoa powder 1/2 cup
Vanilla extract 1 Tbsp
Boiling water 1/2 cup
All-purpose flour 1 1/3 cups
Baking soda 1/2 tsp
Salt 1/2 tsp
Sugar 2/3 cups
Egg 3, room temperature
Zest from 1 orange
Orange Glaze:
Icing sugar (powdered sugar) 1 cup
Freshly squeezed orange juice 2-3 Tbsps
Butter 1 tsp, melted
Preheat oven to 175C. Spray a 9" loaf pan with oil.
In a medium bowl, sift cocoa powder. Add boiling water and whisk till smooth. Add vanilla and orange zest.
In another medium bowl, combine flour, baking soda and salt.
In bowl of stand mixer fitted with whisk attachment, beat sugar, olive oil and eggs till light and fluffy.
On low speed add the cocoa mixture then fold in the flour mixture.
Bake cake for 40 mins. Remove and cool for 10 mins before un-moulding then allow to cool completely on a rack.
In a measuring jug or bowl, mix together ingredients for orange glaze.
Drizzle on cooled cake.
