This Apple Tart has a hidden layer of delicious homemade almond paste underneath the apples. It's super easy to make, delicious and a pretty dessert to serve! Ingredients: Frozen puff pastry 3 apples 2.5 tbsp sugar 2/3 tsp cinnamon powder 20g butter 2/3 tsp brandy
Almond Paste: 30g butter 30g sugar 30g egg, lightly beaten 30g Almond flour 30g egg for egg wash
* Makes a 24cm (9 inch) tart
Peel and slice apples, place in a bowl. Add sugar & cinnamon. Cover & chill in fridge for 1 hour.
Roll out frozen puff pastry. Line pie pan with pastry and chill till needed.
Prepare almond paste filling. In a saucepan, add butter, sugar, egg & almond flour. Cook while stirring constantly till mixture forms a paste. Remove & cool completely.
Spread almond paste evenly onto the base of chilled pie shell and set aside.
Prepare apple filling. Melt butter in a frying pan. Add marinated apples and stir well. Add brandy and cook for about 5 mins. Remove and cool to room temperature.
Preheat oven to 165C.
Top the pie with the apple filling. Roll out remaining frozen puff pastry and place on top of pie. I used a lattice cutter and fondant flower cutters to cut and decorate my pie.
Brush with egg wash and bake for 50 mins.
Remove from oven and cool slightly before cutting and serving.
Note: I used a 24cm (9 inch) tart pan with a removable base
