These delicious and pretty Valentine Jam Bars are simple, quick and delicious and perfect as a gift or to serve to your loved ones on Valentine's Day or any occasion. This recipe is adapted from The Sunday Baker's Syltrutor, Swedish Jam Bars.
I used a food processor to make the dough to speed things up and also added the hearts on top for the occassion.
Ingredients:
Dough:
Plain flour 300 g
Sugar 95 g sugar
Baking powder 1 tablespoon
Salt 1/4 teaspoon
Cold unsalted butter 170 g
1 large egg, room temperature
Strawberry or Raspberry Jam 400 g
Streusel:
Plain flour 60 g
Sugar 50 g
Oats 45 g
1/8 teaspoon salt
Unsalted butter 60 g, melted and cooled (microwave 30 secs)
Preheat oven to 175C and line a baking tin with baking paper.
Into food processor add all the ingredients except for the egg. Process until you get a mixture resembling breadcrumbs.
Add egg and process for 1 min till you get a wet and sandy mixture. Set aside about 3 tablespoons of dough.
Press the rest of the dough into base of baking tin.
Spread jam on top of the dough.
Prepare streusel. In a medium bowl, add all the dry ingredients together then add the melted butter and mix well.
Add streusel evenly on top of jam.
Add 1 tsp of water to reserved dough and roll to form a soft dough. Flour work surface, roll out dough and cut hearts out using a small heart-shaped cookie cutter.
Decorate top of streusel with the cut out hearts.
Place in oven and bake for 30 - 35 mins.
Remove from oven and cool completely before cutting into squares.
