Ingredients: (serves 4 - 5)
Meat:
Minced pork or beef 250 g
Sesame oil 2 tsp
Soy sauce 1 tbsp
Black pepper 1/4 tsp
Sugar 1/2 tsp
Sauce:
Gochujang 1 Tbsp
Black bean garlic sauce 1 tsp
Lao Gan Ma Spicy Chilli Crisp 1-2 tsp (depending on how spicy you prefer)
Garlic 6 cloves, minced
Ginger 1 inch piece, grated
Sugar 1 Tbsp
Low sodium chicken stock 1.5 cups (or Water 1.5 cups + Chicken bouillon powder 1 tsp)
Cornstarch 1 Tbsp
Soy sauce 1 tsp
Sesame oil 1 Tbsp
Chinese black vinegar 1 tsp
Silken tofu 2 x 300 g packs
Spring onions 4, chopped
Cooking oil 1 Tbsp
Marinate the meat with the ingredients as shown. Set aside.
In a small bowl, mix together the ingredients for the sauce.
In a large skillet, heat oil. Add marinated meat and stir-fry till for 5 mins till browned and slightly crispy.
Push meat aside and fry sauce ingredients for 30 secs till fragrant.
Add tofu and mix well with the meat. Break up the tofu into smaller pieces and continue to cook while stirring gently for another 10 mins till sauce has thickened up.
Top with chopped spring onions and serve immediately with rice.
