Peanut pancake is a popular traditional snack commonly found in Singapore and Malaysia and I've also seen them sold in Thailand as well. Some vendors make their pancake thicker more like a cake and some make them thin and crispy. There is also a variety of fillings like red bean, chocolate, coconut and even sweet corn!
I like my pancake a bit on the thinner side and my favorite choice of filling is peanut or peanut butter. It is super easy to make and so yummy!
Ingredients:
Pancake:
All-purpose flour 165 g
Eggs 2
Sugar 30 g
Yeast 1/2 tsp
Water 210 ml
Filling:
Ground peanut
Sugar
In a large mixing bowl, mix together all the ingredients for the pancake. Cover bowl with cling wrap and set aside for 30 mins.
Heat up a non-stick pan on low heat. Pour 1/4 of the batter into the pan. Swirl batter on pan to make sure it is evenly spread.
Spoon about 2-3 tablespoons of ground peanut onto the pancake and sprinkle sugar on top.
Cook for 1 min then carefully fold the pancake into half. Remove pancake from pan.
Cut and serve.
