Love Letter Cookies

This recipe for Love Letter Cookies or Kuih Kapit is the one I have been using for years. It work every single time for me, creating crispy, tasty and delicious authentic Love Letter Cookies!


I didn't want to get my fingers burnt so I choose to fold them into fan-shaped cookies but you may roll them, egg-roll style if you wish.

Ingredients:

Eggs 4

Sugar 220 g

Rice flour 130 g

Coconut milk 250 ml

Water 40 ml


  1. In a large bow, add sugar and eggs. Whisk till sugar is dissolved.

  2. Stir in coconut milk and water and mix well.

  3. Sift in rice flour and tapioca flour and mix till you get a smooth batter. Cover and refrigerate for 1 hour.

  4. Heat electric egg roll maker according to manufacturer's instructions. If you are using the egg roll maker for the first time, grease mould lightly with some cooking oil or spray.

  5. Gently spoon a scant tablespoon of batter onto the middle of each mould, close and cook till the indicator on the maker turns off. Cookies should be golden brown in color.

  6. Quickly fold cookies in half then half again to make a fan-shaped cookie.

  7. Remove and allow cookies to cool completely.

  8. Store cookies in an air-tight container.

You can't eat just one cookie. It would get lonely!
