Rich Vanilla Ice Cream - Easy Recipe

The weather has been crazy lately. It feels like 37ºC outside on most days even though it's a 31ºC so I decided to pull out my old ice cream maker. I had carried this all the way home from Melbourne almost 10 years ago. My sister had given it to me because my brother bought it for her not knowing that she already had the same machine. I haven't made ice-cream in a long long time due to lack of freezer space. Now that I do, Let's make some delicious homemade ice cream!


This very simple vanilla ice cream recipe can be used as a base for any other flavors you may choose to make. It's super quick to put together with just 4 ingredients. Do check out my quick 42-second video on TikTok or Instagram.


Ingredients:

600 ml whipping cream

1 tsp pure vanilla extract

4 egg yolks

100 g caster sugar

  1. In a large saucepan, add whipping cream and vanilla. Bring almost to a boil and remove from heat and cool for 15 mins.

  2. In a large mixing bowl, with an electric mixer, whisk together egg yolks and sugar till mixture leaves a trail when whisk is lifted.

  3. Slowly add cream while stirring with a spatula.

  4. Strain mixture back into saucepan and cook over low heat for 10 mins while stirring constantly with a wooden spoon till mixture is thick enough to coat the back the spoon. Remove from heat and cool for 1 hour.

  5. Churn custard in ice cream maker for 40 mins (or according to the manufacturer's instructions of your ice cream maker.)

  6. You may serve your ice cream immediately or for a firmer texture, freeze ice cream for at least 3-4 hours or overnight.

All you need is love and maybe a little ice cream!
