This fudgy, creamy and rich chocolate ice cream with chocolate chips and marshmallows is pure indulgence! A delicious custard-based ice cream so easy to make that you will think twice about picking up store-bought ice cream!
Ingredients: (makes 6 servings)
Milk 300 ml
70% Dark chocolate100g
Butter 25 g
Vanilla extract 1 tsp
Sugar 125 g
Honey 75 g
Eggs 4, lightly beaten
Whipping cream 300 ml
Chocolate chips 3/4 cup (I used dark)
Mini marshmallows 1/2 cup
Into a heavy-based saucepan, add milk. Break chocolate into the milk, add butter and vanilla. Heat gently, stirring constantly till melted and smooth.
Stir in sugar and honey and heat till mixture boils. Reduce heat and simmer for 4 mins without stirring. Remove from heat and cool slightly.
In a small bowl, beat eggs lightly. Add to chocolate mixture, stirring constantly.
Strain mixture and return to the rinsed out saucepan. Cook over low heat for 10 mins (do not allow to boil), stirring constantly till mixture is thick enough to coat the back of a wooden spoon.
Cool mixture. Cover with cling wrap and chill for at least 1 hour.
Churn mixture in ice cream machine according to manufacture's instructions. Add chocolate chips and mini marshmallows halfway through churning time. Once churning is complete (mine took 40 mins), return to freezer and freeze till firm enough to serve.
If you do not have an ice cream machine:
Freeze custard in a freezer-proof container, uncovered for 1-2 hours till beginning to set around the edges.
Put custard into a food processor and process till smooth. Return to freezer to freeze till firm enough to serve.
