Banana Scones

Got some overripe bananas on hand? Don't toss them! Instead, transform them into these delectable Banana Scones! Waste not, enjoy lots.

Ingredients (serves 8) 2½ cups all-purpose flour ½ tsp salt 1 Tbsp baking powder ½ tsp baking soda ¼ cup granulated sugar 1 tsp cinnamon 1/8 tsp nutmeg 56g cold unsalted butter, cut into small cubes 2 ripe bananas, mashed 4 Tbsp milk ½ cup plain yogurt Egg wash: 1 egg 1 Tbsp water Drizzle: 1/2 cup powdered sugar 1-2 Tbsp milk ½ tsp vanilla extract 1 tsp vanilla extract ½ tsp cinnamon 1. In a large bowl, add flour, salt, baking powder, baking soda, sugar, cinnamon & nutmeg. 2. Cut in butter until it resembles breadbrumbs. 3. In a small bowl, mash bananas & add in yoghurt & milk. Add to the flour mixture and stir till just combined. Add 2 more Tbsps of milk to form a loose dough. 4. Flour counter top and turn dough out onto floured surface and pat into an 8 inch circle. 5. Transfer dough to a pan lined with parchment paper and chill in the freezer for 15 mins. 6. Preheat oven to 200°C. Line a large baking pan with parchment paper. 7. Prepare egg wash, whisk egg and water in a small bowl. 8. Remove dough from freezer, cut into 8 wedges, and place onto prepared pan. Lightly brush scones with egg wash. 9. Bake for 18 mins, or till lightly browned. 10. Remove from the oven & allow to cool completely on a rack. 11. Prepare glaze. In a small bowl, mix powdered sugar, milk, vanilla and cinnamon until smooth. Drizzle over cooled scones.
