I'm obsessed with these coconut cookies! They're the perfect balance of chewy and crunchy, with a delightful coconut flavor. Grab a cup of coffee and savor every bite.
Ingredients (Makes 85 cookies):
Butter, 115 g, softened
Nuttelex 95 g (or olive oil spread)
Brown sugar 1 3/4 cups
Vanilla extract 1 tsp
Eggs 2
Water 1/4 cup
All-purpose flour 4 cups
Baking powder 1.5 tsp
Baking soda 1/2 tsp
Salt 1/4 tsp
Desiccated coconut 1 cup
1. Pre-heat oven to 185°C.
2. In bowl of stand mixer, beat together butter, Nuttelex and sugar till creamy.
3. In a small bowl, lightly whisk 2 eggs and water and add into the butter-sugar mixture. Continue beating till well mixed.
3. Fold in flour, baking powder, baking soda, salt and desiccated coconut.
4. Shape dough into 1-inch balls and place 2 inches apart on a lined baking tray. Flatten with a fork.
5. Bake for 10-12 mins till golden brown.
6. Cool completely on a wire rack and store in an air-tight container.
