Banana Walnut Cake

Stuck with overripe bananas? Don't worry, they are a baking opportunity in disguise! Whip up some scrumptious Banana Walnut Cake and turn those bananas into a delicious treat. It's the perfect way to rescue them from going to waste.


You can halve the recipe if you want to bake only one cake but because I needed to use up my overripe bananas quickly, I made two cakes and they were gone in no time!

Ingredients (Makes two 9 X 6" cakes) Bananas 480g 6 eggs Sugar 180g Self-raising or Cake flour 300g Baking powder 1 tsp Baking soda 1/2 tsp Salt 1/4 tsp Canola oil 200g Brandy 2 Tbsp Walnuts, about 20, for topping 1. Preheat oven to 160°C. Oil & line two 9x6" pans. 2. Mash bananas. 3. In bowl of stand mixer, whisk together eggs & sugar till light and fluffy. 4. Add bananas and whisk for 30 secs. 3. Sift in flour, baking powder, baking soda & salt. Fold gently. 4. Fold in canola oil then the brandy. 5. Pour batter in prepared pans and bake for 45 mins. 6. Remove from oven and allow to cool in pans for 30 mins before removing from pans.
