These cookies are so pretty and it makes such a great home baked birthday gift! I had so much fun making them and the frosting is so so delicious on these soft and butter cookies!
Ingredients: Cookie dough: 170 g butter 130 g sugar 75 g egg (lightly beaten)
1 tsp vanilla extract (you may use almond or birthday cake flavor but adjust accordingly if you do) 340 g flour 1.5 tsp baking powder sprinkles
Frosting: 110 g cream cheese 56 g butter 1 tsp vanilla 260 g icing sugar milk to thin if needed
(Makes 12, 3.5 inch cookies)
Preheat oven to 175C
In bowl of stand mixer, mix together butter & sugar till creamy. Add in egg and vanilla extract and mix well.
Add in flour & baking powder till combined then add sprinkles. Mix till dough is formed.
Divide dough into 12 and roll into a ball.
Add sprinkles to a plate. Roll dough balls in sprinkles. Transfer to a lined baking tray and press dough with the base of a glass or measuring cup to flatten.
Bake for 18 mins and remove from oven. After 5 mins, transfer to a rack to cool completely.
Prepare frosting - In bowl of stand mixer whip all frosting ingredients together. Transfer to a piping bag fitted with piping tip of your choice.
Pipe frosting onto cooled cookies and top with more sprinkles.
Note: I store my frosted cookies in an airtight container in the fridge for up to a week. Cookies are delicious served cold as well!
