Brown butter, the secret ingredient that make these chewy oatmeal cookies loaded with dried berries, chocolate chips topped with more chocolate chunks so irresistibly special! Rich and intense with nutty brown butter flavor, these cookies will make it hard for you to stop at just one!
Ingredients: (Makes 50 cookies)
Butter 1 cup
All-purpose flour 1 3/4 cups
Baking soda 1 tsp
Salt 1 tsp
Brown sugar 1 cup
Granulated sugar 1/2 cup
Eggs 2
Vanilla extract 1 Tbsp
Rolled oats 2 1/4 cups
Chocolate chips 3/4 cup
Dried berries 1/2 cup
In a medium saucepan, add butter and melt over medium heat till foamy, smells nutty and browns (about 5-6 mins). Transfer to a heat-proof bowl and chill for approximately 1 hour till firm but still soft.
Preheat oven to 175C. Line 2 baking sheets with parchment paper or silicon mat.
In a medium bowl whisk together flour, baking soda and salt.
In bowl of stand mixer, beat brown butter, brown sugar and granulated sugar together till smooth. Add eggs and vanilla extract and mix well.
Add flour mixture and mix on low till just combined. Stir in oats, chocolate chips and dried berries.
Roll dough into balls and place on prepared baking tray about 2 inches apart. Press chocolate chunks on top and flatten slightly.
Bake for 15 mins. Remove and allow cookies to cool for 5 mins on baking tray then transfer to cooling rack to cool completely.
