Carrot Cake Loaf

Indulge in pure Carrot Cake bliss! šŸ„•šŸ° This homemade loaf is incredibly moist and flavorful, topped with a dreamy cream cheese frosting and crunchy walnuts. Itā€™s the perfect treat for any occasion! Some even say that it's the best carrot cake that they ever tasted!

Ingredients: makes one 8 x 4 inch loaf

Sugar 3/4 cup

Vegetable oil 3/4 cup ( I used canola)

Eggs 2

All purpose flour 1 cup

Cinnamon 1 tsp

Baking soda 1 tsp

Baking powder 1 tsp

Carrots, grated 1.5 cups

Walnuts, chopped 1/2 cup + more for topping


Frosting:

Powdered sugar 1 1/4 cups

Butter, softened 60 g

Cream cheese 113 g

Vanilla extract 1 tsp


1. Pre-heat the oven to 175Ā°C.

2. In a large bowl, whisk together sugar and oil.

3. Whisk in eggs.

4. Sift in flour, cinnamon, baking soda & baking powder. Fold gently till just combined.

5. Fold in carrots & walnuts into an oiled and lined loaf pan.

6. Bake for 45 mins until tested done with a toothpick.

7. Remove from the oven and cool completely on a rack.

8. Beat all the ingredients for the frosting with an electric mixer until smooth and creamy.

9. Frost cake and sprinkle with chopped walnuts.
