Chocolate Bourbon Sandwich Biscuits

This nostalgic sandwich biscuit originated in London, UK in 1910. It is a chocolate biscuit that is sandwiched with a thick layer of smooth chocolate buttercream filling and sprinkled with sparkling sugar on top.


My kids grew up eating this biscuit (cookie) and I used to buy them from Marks & Spencer. IMO their Bourbon biscuits were the best but my homemade version is even better!


Ingredients: (Makes 18 biscuits)

Biscuits:

All purpose flour 1-1/3 cups (180 g)

Custard powder 1/2 cup

Unsweetened cocoa powder 1/4 cup

sugar 1/2 cup

Egg 1

*Course sugar for sprinkling


Chocolate Buttercream Filling:

Icing sugar 1 cup

Butter 2 oz (56 g)

Unsweetened cocoa powder 2 Tbsp

Milk (a few drops)


  1. Preheat oven to 175C (350F)

  2. Sift flour, custard powder and cocoa powder into a large bowl.

  3. Cream butter and sugar then stir in egg. Add sifted ingredients and mix to an smooth dough.

  4. Lightly dust work surface with flour. Roll dough to about 3mm (1/8 inch). Cut into 6x3cm rectangles. Place on lined baking tray. Sprinkle with sugar.

  5. Bake for 17-18 mins. Remove and cool completely.

  6. Prepare filling - Beat all the filling ingredients together with an electric mixer to form a stiff buttercream. Adjust with a few drops of milk to get a spreadable consistency.

  7. Match up 2 biscuits at a time and sandwich with buttercream.

So good with a glass of cold milk!
