Chocolate Sheet Cake with Fluffy Chocolate Yogurt Fudge Frosting

This cake is a super moist and delicious chocolate sheet cake that is made in one bowl. It's fuss free and so quick to put together. And the chocolate yogurt fudge frosting is a dream! You can easily serve 16-20 people with this cake so it's a great recipe to make for a crowd. Here are the links to my 1-min TikTok and Instagram video tutorial.


Ingredients:

For the cake:

224 g all-purpose flour

220 g granulated sugar

65 g cocoa powder , sifted

1.5 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 eggs

2/3 cup buttermilk

1/2 cup canola oil

2 tsp vanilla

1/2 cup hot water


Frosting:

113 g butter, unsalted

190 g icing sugar

75 g cocoa powder

3 Tbsp plain yogurt

3 Tbsp whipping cream

1/2 tsp salt (leave this out if using salted butter)


  1. Preheat oven to 176C (350F).

  2. Spray a 9 x 13-in. baking pan and line with parchment up the length of 2 sides.

  3. Whisk flour, sugar, baking soda, baking powder and salt in a medium bowl. Sift in cocoa powder and whisk together.

  4. Whisk eggs, buttermilk, oil and vanilla in a large bowl. Stir in flour mixture until just combined. Whisk in hot water. Pour into prepared pan.

  5. Bake until a cake tester inserted in centre of cake comes out clean, about 30 mins. Let cake cool in pan on a rack for 30 min. Place rack on top of cake, then invert and remove baking pan and parchment. Cool completely. Invert onto serving platter.

  6. Make the frosting: In a large bowl sift together icing sugar cocoa powder.

  7. In bowl of stand mixer, beat butter till light and fluffy.

  8. Add 1/3 of sugar/cocoa mixture alternating with the yogurt and whipping cream. Repeat till all the ingredients have been added.

  9. Beat on high till light and creamy.

  10. Frost cooled cake and add sprinkles if preferred.
