Christmas Cakelets

My sister-in-law gave me these beautiful Christmas baking pans many years ago and I decided to use them in this very simple cakelet recipe that is easily customisable to suit your taste. I used chocolate chips but you may add cinnamon, ginger or cardamom if you prefer. I have 3 pans and this recipe was exactly enough to fill all 3 of them perfectly.

Ingredients:

Light olive oil or vegetable oil 1/2 cup

Granulated sugar, scant 1/3 cup

Powdered sugar 1/3 cup

Eggs 2

Milk 1/2 cup

Vanilla extract 1 tsp

All-purpose flour 1 cup

Baking soda 1/2 tsp

Salt 1/4 tsp

Mini chocolate chips 1/2 cup


  1. Preheat oven to 190C or 375F. Spray pans with non-stick baking spray.

  2. In bowl of stand mixer or large bowl, add oil, sugars, eggs, vanilla and milk and whisk for 30 secs.

  3. Fold in chocolate chips.

  4. Fill pans almost to the tops and bake for 13 mins.

  5. Remove cakelets and let cool completely on a rack.

  6. Dust with powdered sugar.
