Classic French Madeleines

Baked these heavenly Madeleines from scratch and they turned out absolutely divine! These little French treats are buttery, light, and have the perfect touch of citrus flavor.


There's nothing quite like enjoying a warm Madeleine with a cup of tea or coffee!


Ingredients: (makes 24)

All-purpose flour 1 cup

Baking powder 1 tsp

Baking soda 1/2 tsp

Salt 1/4 tsp

Eggs 3

Sugar ⅔ cup

Vanilla extract 1 tsp

Lemon zest 1 tsp

Unsalted butter 1/2 cup, melted and cooled

Powdered sugar for dusting


1. Sift the flour, baking powder, baking soda, and salt together, set aside.

2. Whisk eggs and sugar together for 5 mins till mixture is pale and thick.

3. Whisk in the vanilla extract and lemon zest.

4. Drizzle melted butter into the batter, whisk till just incorporated.

5. Fold in flour mixture in 3 additions till just incorporated.

6. Cover with plastic wrap and chill the batter for 1 hour or overnight.

7. Brush 2 madeleine pans with soft butter and flour pans. Place in the freezer.

8. Preheat oven to 220C.

9. Gently mix the batter with a spatula to remove excess bubbles. Pipe or drop 1 tbsp of batter into the middle of each cavity of the pans.

11. Bake for 10 mins. Remove and unmold immediately.

12. Dust with powdered sugar and serve.
