Huge thanks to Crumbles of Health for sharing this amazing recipe! These Russian Sweet Buns (or Poppy Seed Pastries) are absolute perfection.
Instead of a stand mixer, I used a bread machine and ran the dough mode. I also used bread flour instead of all-purpose flour.
The dough is so easy to handle and the results are simply divine. Can't wait to enjoy these with a cup of tea.
Ingredients (makes 8 large buns):
Bread flour 500 g
Sugar 100 g
Salt 1/2 tsp
Vanilla extract 2 tsp
Eggs 2
Nuttelex or butter, 80 g, softened
Warm milk 1/2 cup
Active yeast 2 1/4 tsp
1 tsp sugar
Butter 2 Tbsp, melted
Raw sugar, 2-3 Tbsps
Poppy Seeds, 2 Tbsps
Egg wash: 1 egg + 1 Tbsp water
1. In a jug, warm milk. Add yeast and 1 tsp sugar. Stir and allow to stand for a couple of mins to activate the yeast.
2. Place all other ingredients into the pan of bread machine and pour milk/yeast mixture into the pan.
3. Run the dough mode of the bread machine.
4. Once the dough is ready, remove from the pan and divide into 8.
5. Roll into balls. Cover with cling wrap and allow dough to relax for 10 mins.
6. Roll each ball into a rectangle. Brush with melted butter and sprinkle with some raw sugar and poppy seeds.
7. Roll into a tube and seal. Pinch both ends together and place on a lined baking tray.
8. Split open, cover and allow to rise in a warm place for 45 mins.
9. Brush with egg wash and bake in a preheated 175°C oven for 17 mins.
10. Remove from the oven and brush immediately with melted butter.
