Custard Cream Buns

This gorgeous Custard Cream Buns recipe is adapted from Today Is Pannohi. I made mine partially using my KitchenAid mixer in the initial mixing/kneading but the dough is quite small so if you feel like an arm workout is necessary do follow their recipe and use your hands. Here's a short clip on my Tik Tok and Instagram on the process.


Ingredients: (Makes 5 buns)

*Bake at 190℃ for 13 mins


Ingredients

Bread dough:

Bread flour 130g

Cake flour 30g

Yeast 1 tsp

Sugar 1 Tbsp

Beaten egg - 26 g (1/2 egg)

Water 70 ml, lukewarm

Salt 1/3 tsp

Unsalted butter 20 g

Egg wash - 1/2 egg + 1/2 Tbsp milk


Custard Cream:

2 Egg yolks

Sugar 60g

Cake flour 25g

Milk 200 ml

Unsalted butter 10g

Vanilla extract 1 tsp


  1. In a small bowl, mix together water, sugar and yeast. Stir and let stand for 10 mins for yeast to activate. Mix in beaten egg.

  2. In a large bowl or bowl of stand mixer fitted with dough hook, add bread flour, cake flour, salt and butter.

  3. Add in yeast mixture and mix till dough comes together.

  4. Transfer dough to work surface and knead till dough passes the window pane test. Cover dough and let rise for 1 hour or till doubled in size.

  5. Punch dough down and divide dough equally into 5 pieces. Roll into balls, cover and let rest for 10 mins.

  6. Prepare custard cream - In a microwave-safe measuring jug or bowl, mix egg yolks and sugar together. Mix in cake flour and milk alternately in 3 additions till smooth.

  7. Microwave for 1 min, stir then microwave for another 30 secs. Stir well.

  8. Transfer custard to a plate, cover with cling wrap, pressing down to cover the surface of the custard and let cool.

  9. Press each dough roll into a 9cm paper baking cases. Form an indentation in the middle of the dough by pressing dough against the walls of the paper cases. Prick bottoms of the dough with a fork.

  10. Transfer custard to a piping bag and fill the middle of the buns with the custard. Cover buns and let rise for 40 mins.

  11. Preheat oven to 190C. Brush sides of buns with egg wash.

  12. Bake buns for 13 mins.

  13. Remove from oven. Dust with icing sugar and decorate with berries of your choice.
