This is a moist and delicious chocolate sheet cake with a rich, chocolatey frosting that will make you swoon! Definitely one of the easiest and best chocolate cake recipes I've ever tried and will use again and again. It's absolutely delicious!
The recipe below has been tweaked from the original by Chatelaine, for a less-sweet cake. I also halved the amount of ingredients for the frosting which was more than enough to decorate my cake with. My cake pan measures 34 x 20 x 3 cm. You may however go with the original recipe if you would like a thicker layer of frosting or if you are using a larger pan. Ingredients:
For the cake:
224 g all-purpose flour
220 g granulated sugar
65 g cocoa powder , sifted
1.5 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 eggs
2/3 cup buttermilk
1/2 cup canola oil
2 tsp vanilla
1/2 cup hot water
For the frosting:
280 g icing sugar , sifted
50 g cocoa powder , sifted
185g butter , softened
78 ml milk
Instructions:
Preheat oven to 176C (350F).
Spray a 9 x 13-in. baking pan and line with parchment up the length of 2 sides.
Whisk flour, sugar, cocoa, baking soda, baking powder and salt in a medium bowl.
Whisk eggs, buttermilk, oil and vanilla in a large bowl. Stir in flour mixture until just combined. Whisk in hot water. Pour into prepared pan.
Bake until a cake tester inserted in centre of cake comes out clean, about 30 mins. Let cake cool in pan on a rack for 30 min. Place rack on top of cake, then invert and remove baking pan and parchment. Cool completely, about 30 min. Invert onto serving platter.
Make the frosting - Sift icing sugar and cocoa in a medium bowl. In bowl of stand mixer, whisk butter on medium-high, until light & fluffy. Reduce speed to medium-low and add icing sugar mixture, alternating with milk and ending with icing sugar mixture, until smooth and combined. Transfer to a piping bag fitted with a flower tip. Pipe frosting on cake and top with sprinkles. I piped some apricot gel over mine instead of sprinkles.
