These cookies get requested by family and friends several times a year and it's definitely one of the easiest cookies you can ever make. Only 5 ingredients are needed to make these delicious, light, melt-in-your-mouth buttery cookies that are way, way better than the store-bought tinned Danish butter cookies! It doesn't take a lot to time to whip them up and you'll likely be enjoying them with a cup of tea in just an hour or less after you've gathered your ingredients and pulled out mixer to make them!
Ingredients: 100g butter - I used salted butter at room temperature. You may use unsalted, just add a pinch of salt if you do. 25g icing sugar 45g plain flour 30g bread flour 25g rice flour
Directions:
Preheat oven at 160C.
In bowl of stand mixer cream together butter & icing sugar until fluffy.
Sift in flours & fold in till well combined.
Transfer to piping bag fitted with a flower tip (Wilton 1M) and pipe onto lined baking trays.
Bake at 20mins.
Remove from oven and cool completely before storing in an air-tight container.

She loves these cookies so much that we even named the cookies after her in our family.
We call them "Inji Butter Cookies"!
