Savor a slice of happiness with this easy to make, super delicious French Yogurt Cake. All you need are a few basic ingredients; and olive oil and lemon together is a match made in heaven!
This cake is even more delicious the next day, that is if you can wait!
Ingredients:
All-purpose flour 180 g
Baking powder 2 tsp
Salt 1/4 tsp
Sugar 150 g
Zest of 1 lemon
Plain yogurt 125 ml
3 Eggs
Light olive oil 125 ml
Blueberries (fresh or frozen) 3/4 cup
Preheat oven to 175C.
In a medium bowl, whisk together flour, baking powder and salt.
In bowl of stand mixer, rub lemon zest into the sugar till aromatic.
Add eggs, vanilla and yogurt and whisk till mixture is well blended.
Fold in dry ingredients and then the olive oil.
Pour batter into an oiled loaf pan and bake for 1 hour or till tested done with a skewer. (Cover with aluminium foil midway into baking if top of the cake is turning dark too quickly.)
Cool cake in the pan for 5 mins. Unmould and cool completely on a rack.
Dust with powdered sugar, slice and enjoy!
