A quick and easy Frosted Sugar Cookies are soft, buttery cookies that are perfectly topped with a delicious sweet almond icing that are so, so yummy. If you are a soft sugar cookie fan, this is the recipe for you. Recipe adapted from Cooking with Karli's Copycat Crumbl Chilled Sugar Cookie.
Ingredients: Sugar Cookies: 1/2 cup (113 g) salted butter 1/2 cup granulated sugar (100g) I used about 80g 1 egg 1/2 tsp vanilla extract 1/4 tsp almond extract 1.5 cups (180 g) All-purpose flour 1 tsp baking powder
sprinkles or jimmies
Sweet Almond Icing: 1/4 cup (57 g) salted butter softened 1.5 (180 g) cups icing sugar 1/2 tsp almond extract 1-2 tbsp milk pink food coloring
* Makes 9 smaller (3.5 inch cookies or 6 large cookies. I made 9)
Preheat oven to 175C.
In bowl of stand mixer, mix together butter & sugar till creamy. Add in egg and vanilla extract and mix well.
Add in flour & baking powder till well combined and a dough is formed.
Divide dough into 6 or 9 pieces and roll into a ball.
Transfer to a lined baking tray and press dough with the base of a glass or measuring cup to flatten.
Bake for 18 mins and remove from oven. After 5 mins, transfer to a rack to cool completely.
Prepare frosting - In bowl of stand mixer whip all frosting ingredients together.
Spread frosting onto cooled cookies. Top with sprinkles or jimmies. Chill cookies before serving.
