Healthy Olive Oil Chocolate Chip Almond Cookies

These heavenly cookies have no butter, margarine or shortening but are full of flavor! Perfectly crunchy outside and oh-so-chewy inside, studded with dark chocolate chips. You won't feel guilty going for seconds with this healthy cookie!

Ingredients: Makes 13 cookies

1/2 cup light olive oil

3/4 cup dark brown sugar

1/4 cup granulated sugar

1 egg + 1 egg yolk, room temperature

1.5 tsp vanilla extract

1 3/4 cup all purpose flour

1 tsp baking soda

1/2 tsp salt

1 cup dark chocolate chips

1/2 cup or more dark chocolate pieces


  1. In bowl of stand mixer, add light olive oil and sugars. Whip well till combined.

  2. Add egg, egg yolk and vanilla and whisk well till lighter in color.

  3. Fold in flour,baking soda and salt.

  4. Fold in chocolate chips. Cover and chill for 40 mins.

  5. Preheat oven to 180C and line 2 baking trays with silicon mat or parchment paper.

  6. Scoop dough onto trays with an ice-cream or cookie scoop well spaced apart as these cookies will grow!

  7. Bake for 12 mins. Remove from oven and allow to cool on tray for 5-10 mins. Transfer cookies to a rack to cool completely before storing in an airtight container.
