Mom's Peach Shortcake

My mom used to make this dessert for family gatherings during the holidays. She lived in Melbourne and I used to fly over twice a year to spend time with her but due to Covid-19, I was not able to do so. When she passed suddenly last year, it was a very sad time for me and it was hard to accept that she is no longer with us. Mom was an amazing cook and baker, so it gives me great comfort to be able to continue to make the things that she used to and hopefully she is happy and proud that I am doing so. This Peach Shortcake is very simple to make and you may also make them with a variety of fillings instead of peach like cherry, apple or any other canned berries of your choice. It's really good and it's a great dessert to bring to a party or gathering. You can make this on the day itself or the day before and chill it in the fridge if you want to serve it cold. So good with some Homemade Vanilla Ice Cream!


Ingredients: (Makes one 13" x 9" pan/tray)

2 eggs, lightly beaten

250 g butter, melted

1 1/2 cups self-raising flour

1 1/2 cups all purpose flour

1 1/4 cups sugar

1 can sliced peaches / apples


  1. Preheat oven to 180C (356F).

  2. Line bottom of baking pan/tray with baking paper.

  3. In a large bowl, mix together flour, sugar, eggs and butter together with a spatula till a soft dough forms. Divide dough into half.

  4. Using one half the dough, press dough evenly to fit the bottom of the baking pan.

  5. Place sliced peaches on top of the pastry.

  6. With the other half of the pastry, break into small pieces and place on top of the peaches.

  7. Bake at 180C for 50 mins till golden brown.

  8. Serve warm or cold.
