No-Chill Sugar Cookies

This is my go-to sugar cookie recipe which I have been using every year to bake my Christmas cookies.


Ingredients: (makes 3 doz cookies)

Butter 225 g / 1 cup

Granulated sugar 200 g / 1 cup

Vanilla extract 1 tsp

Almond extract 1/2 tsp

Egg 1

Baking powder 2 tsp

Salt 1/2 tsp

All-purpose flour 360 g / 3 cups


  1. Preheat oven to 175C.

  2. In a large bowl, add flour, baking powder and salt and mix well with a whisk.

  3. In bowl of stand mixer, add butter and sugar and cream till smooth.

  4. Beat in vanilla & almond extract and egg. On low speed add flour mixture and mix till dough comes together.

  5. Lightly flour work surface and roll dough in batches to 1/4 inch thickness and cut with cookie cutters.

  6. Transfer to a lined baking sheet and bake cookies for 12 mins.

  7. Cool on cookie sheet for 10 mins then transfer to a rack to cool completely before icing cookies.
