Purple Sweet Potato Buns

I really love how vibrant and gorgeous these Purple Sweet Potato Buns turned out! The buns are made using my favorite super soft bread dough recipe in a bread machine to keep this recipe really easy. The sweet potato paste is also super easy to prepare and it isn't overly sweet.

Ingredients: (makes 10 buns)

Dough:

Bread Flour 330 g

Milk powder 1.5 Tbsp

Salt 1 tsp

Milk 200 ml, lukewarm

Sugar 30 g

Egg Yolk 2

Yeast 1 tsp

Butter 25 g, softened


Purple Sweet Potato Paste:

Purple sweet potato 450 g

1/4 cup water

Condensed milk 3 Tbsp

Coconut milk 3 Tbsp

Honey 2 Tbsp


Eggwash: 1 egg yolk + 1 Tbsp milk

Sesame seeds 1 Tbsp


  1. Peel sweet potatoes and cut into chunks. Place in a microwavable bowl with 1/4 cup water. Microwave for 4 mins till fork tender.

  2. Place steamed sweet potatoes into a food processor. Add condensed milk, coconut milk and honey. Process into a fine paste.

  3. Prepare 10 sweet potato balls, cover and set aside. I used a small ice-cream scoop to portion out the sweet potato balls. There was some leftover paste which I froze for future use.

  4. Place all the ingredients for the dough into the pan of bread machine. Run the dough mode according to the manufacturer's instructions of your bread machine.

  5. After the dough mode has been completed and dough has doubled in size, remove from pan onto a lightly floured work surface.

  6. Flatten and divide dough into 10 equal pieces (approximately 63 g each). Roll into balls, cover with a damp towel and rest for 15 mins.

  7. To shape buns, flatten a dough ball and place a sweet potato ball in the centre. Wrap tightly into a ball and pinch to seal completely.

  8. Flatten with a rolling pin and roll out to a long oval approximately 16 x 8 cm ( 6 x 3"). With a pizza cutter, make 7 long slits in the middle along the length of the the dough. Do not cut all the way to the ends. Roll dough from one end diagonally to the other end. Twist to form a circle and tuck ends under the buns. Place on a lined baking sheet. Repeat with the rest of the dough. Cover and let proof for 45 mins.

  9. Preheat oven to 176C.

  10. Brush buns with egg wash and sprinkle with sesame seeds. Bake for 20 mins.
