I love coffee cookies and this recipe is from Common Sense Home for Coffee Bean cookies or Reindeer Hooves cookies. If you want the cookies to look like cute coffee beans, shape them smaller or shape them larger to resemble reindeer hooves which is so cute and apt as Christmas cookies. I can't wait to share these cute Reindeer Hooves with my family!
I baked them twice the duration the original recipe called for which was 10 minutes as my cookies were larger and also that it had been raining all day hence the humidity was high and my cookies felt underbaked and too soft for my liking.
Ingredients: (makes 40 cookies)
Instant coffee 2 tsp
Milk 2 Tbsp
Butter 170 g, softened
Cream cheese 85 g
Brown sugar 150 g
Vanilla extract 1 tsp
All-purpose flour 250 g
Cocoa 2 Tbsp
Chocolate chunks 85 g
Shortening 1 tsp
Combine milk and instant coffee in a small bowl and stir till dissolved.
In bowl of stand mixer, mix butter and cream cheese till well blended.
Add brown sugar, vanilla and coffee mixture and mix till incorporated.
Mix in flour and cocoa till blended.
Cover and chill 1 hour.
Preheat oven to 175 C.
Shape dough into 1 inch ovals and press a notch into the middle of each cookie with a chopstick and place 1 inch apart on a lined baking sheet.
Bake for 18-20 mins until edges are firm and bottoms are a bit darker.
Remove and cool completely on a wire rack.
Prepare dipping chocolate - in a medium microwavable bowl, add chocolate and shortening and microwave for 1 min. Stir and repeat 1 or 2 more times till mixture is smooth.
Dip half of each cookie one at a time and place on a rack to set. You may place dipped cookies into the fridge to set to speed up the setting of the chocolate.
Store cookies in an air-tight container.
