Sablés Breton - French Butter Cookies

Sablés Breton are delicious classic salted French butter cookies which are delightfully salty, sweet, crumbly, flaky and melt-in-your-mouth! They are super simple to make with only a handful of basic ingredients. Use the best French butter you can buy and you are in for a treat! Recipe from A Baking Journey. Ingredients:

3 egg yolks, room temperature

75 g icing sugar

100 g butter, softened

175 g plain (all-purpose) flour

1/2 tsp baking powder

Egg wash - 1 egg yolk

  1. In bowl of stand mixer, fitted with whisk attachment, whisk egg yolks and icing sugar together till pale and thick.

  2. Sift in flour and baking powder. With a spatula, mix till well combined.

  3. Roll out dough between 2 pieces of baking paper to 6mm thick. Chill in fridge for at least 1 hour.

  4. Preheat oven to 160C. Cut out cookies with a 6cm round or fluted cookie cutter and transfer to baking tray. If the cookies get too soft, pop cookies back into the fridge to chill till they firm up again.

  5. Use the back of a fork to create a crosshatch pattern. Brush each cookie with egg wash. (I think it may be better to brush with egg wash first before creating the crosshatch pattern with the back of the fork. I shall do that the next time I bake these cookies).

  6. Bake for 18 mins or till golden in color. Transfer to a rack to cool completely before storing.

A balanced diet is a cookie in each hand!
