Another super fun cookie to make during Christmas are these melt-in-your-mouth Thumbprint Cookies. Not only are they are they a breeze and super fun to make, they are absolutely delicious! Fill them with any jam of your choice or with lemon curd. Share them with family and friends, I can guarantee that they will be gone in no time at all!
I used my leftover icing from my Christmas cookies to drizzle over the top of the cookies but they are so pretty as they are so this part is purely optional.
Ingredients: (makes 17 cookies)
All-purpose flour 1 cup
Cornflour 2 Tbsp
Unsalted butter 113 g, softened
Powdered sugar 1/2 cup
Vanilla extract 1/2 tsp
Salt 1/4 tsp
Jam (I used strawberry) 1/4 cup
Sift flour, cornflour and salt into a large bowl.
In bowl of stand mixer, add butter and sift in powdered sugar.
Beat till light and creamy. Make sure you scrape down the bowl in between.
Add vanilla and mix well.
On low, add flour mixture in 2 additions till combined.
Preheat oven to 180C. Roll dough into balls and place on a lined baking tray, 2 inches apart.
Make an indentation in the center of each cookie with the back of a round teaspoon or you may use your finger.
Fill center of each cookie with jam almost to the top.
Bake for 13 mins and allow to cool completely.
Drizzle with icing if preferred or serve as it is without.
