A very simple recipe for Singapore Hawker-Style Oyster Omelette that my family said that it's better than any we can buy outside. It will cost you only a fraction of what you would have to pay for at the hawker and there is plenty of yummy oysters for everyone. Nobody has to feel sad about having only 1 or 2 pieces of oysters only!
Ingredients:
Frozen oysters 12 (or more) medium or large-sized (defrosted and carefully rinsed)
Eggs 4, lightly beaten
Cooking oil 3 Tbsp
Fish sauce 1/2 tsp
Cilantro for garnishing
Batter:
Tapioca starch 30 g
All purpose flour 10 g
Wheat starch 10 g
Water 100 ml
Fish sauce 1 tsp
Soy sauce 1 tsp
Sesame oil 1 tsp
Mix batter, set aside.
Heat oil in a large frying pan. Pour 2/3 of the batter onto the pan. Fry till crispy, flip and continue frying for another 1 min then break into smaller pieces.
Pour half the beaten eggs onto pan. Fry till cooked then flip and add the other half of the eggs. Cook till set. Add 1/2 tsp of fish sauce and fry till crispy.
Add oysters into the remaining of the batter.
Push omelette aside in the pan. Add oysters and fry for another 1 min till cooked (if your pan is not a non-stick pan, you may add another 1/2 or 1 Tbsp of oil before adding the oysters).
Remove from pan to serving plate, top with chopped cilantro and serve immediately with your favorite chilli sauce or sambal!
Nobody has to count the number of oysters they can have!
