Snowball Cookies

One of the simplest but yet delicious cookie you can ever make are these melt-in-your-mouth Snowball Cookies which are also known as Mexican Wedding Cookies or Russian Teacakes. Theyare also one of my favorite cookies and are perfect as Christmas gifts. They are so quick to make and a batch of 20 cookies are ready from start to finish in half an hour!


Ingredients: (makes 20, 1.5 inch cookies)

Butter 1/2 cup / 113 g, softened

Powdered sugar 1/4 cup

Vanilla extract 1/2 tsp

All-purpose flour 1 cup

Almond flour 1/4 cup

Powdered sugar for rolling cookies, 2 Tbsps

  1. Preheat oven to 190C and line a baking pan with baking paper or silicon mat.

  2. In bowl of stand mixer, add butter and powdered sugar. Beat till smooth, about 3 mins.

  3. Add vanilla, flour and almond flour and mix till combined.

  4. Roll dough into 1 inch balls and place on baking sheet.

  5. Bake for 13 mins.

  6. Remove from oven and roll immediately in powdered sugar.

  7. Allow to cool completely before storing in an air-tight container.
