My son, Rory's favorite dessert is apple cake and asked one for his birthday last weekend. He really liked the Norwegian Apple Pie I made the last time and I adapted the recipe to make it into a cake instead for the birthday celebration.
This is an easy one-bowl recipe and comes together quickly with just a few simple ingredients and it's so so good!
Ingredients:
3 Eggs
1 cup Sugar
2 tsp Vanilla
¾ tsp Salt
3 tsp Baking Powder
1 ½ cups Flour
4 Apples, peeled and diced (I used Granny Smith)
1/2 cup blueberries
1 Tbsp butter, melted
Peel and chop apples and set aside.
Grease and line the bottom an 8" round cake pan and preheat oven to 175C or 350F.
In a large bowl, add eggs, sugar and vanilla and beat till sugar is dissolved.
Add baking powder and salt and mix well.
Add flour and mix till just combined.
Gently fold in apples and blueberries.
Fold in melted butter.
Pour batter into prepared baking pan.
Bake for 40-45 mins or till cake is tested done.
Cool cake before slicing and serving.
A birthday can never have too much cake!
